Skifahrer
In the past, alpine cheesemakers were sometimes still in the mountains when early winter snow arrived. Then, a skier would strap on the “Räf”, a wooden backpack, and glide down the glistening white slopes, carrying cheese to the valley below. Inspired by this tradition, Skifahrer is a creamy hard cheese aged for 6 months in the Toggenburg region. It melts on the tongue with a pure, nutty flavour and a tangy finish.
