Sbrinz AOP
Sbrinz AOP is known for undergoing a meticulous ageing process; it can mature gracefully for up to 24 months, developing an extraordinary profile of flavours and textures. Highlighting the delicate milk of the Swiss brown cow, out of which this cheese is exclusively manufactured. The heritage of Sbrinz AOP stretches deep into history, tracing back to the 1500s. It was during this era that cheeses were amassed in the town of Brienz, awaiting their journey over the Alps to Italy, carried by sturdy mules. Among these was the precursor to what we now know as Sbrinz, taking its name from “lo sbrinzo,” as it was called by the Italians who appreciated its rich flavours.
